Sfouf Cake
My Childhood Memory
What I am sharing with you today is my one of my childhood memories that my Mom used to make us frequently. Sfouf is a yellow cake very famous in Lebanon and the middle east. When visiting traditional Lebanese/Arabic bakeries, you can easily spots the Sfouf cakes on the shelves. This cake is especially consumed during the Lent period, where Christians abstain from meat and dairy products. Making this dessert a perfect treat.
A perfect Tea / Coffee dessert full of flavors and so tender. It’s aroma fills the house with goodness and if you are like me, probably you won’t wait until it cools down to try it out. The preparation is absolutely easy, and the satisfaction is surely guaranteed. Enjoy baking it with your family and kids as you can even prepare them in a cupcake tin. My daughter loves when we prepare them as cupcakes.

- 3 cups Flour
- 3 cups Semolina
- 2.5 cups sugar
- 2 cups Milk You can substitute with Water
- 1 Tbsp Ground Anise
- 1 cup Vegetable Oil You can use Butter instead, I prefer Oil
- 1 Tbsp Turmeric
- 1 Tbsp Baking Powder
- Few Drops Vanilla Extract
- Pine Nuts or Sesame to Garnish
- Tahini to Coat the Pan

- Place the flour, semolina, sugar, anise powder, turmeric, baking powder and vanilla powder in a bowl.
- Mix the milk and the oil or melted butter and vanilla (if using extract).
- Add the liquid ingredients to the dry ingredients, stirring until mixed well; if the dough is very stiff, add a little more water or milk until the dough is thick and firm but very moist and easy to pour.
- Grease the pans with tahini well, sprinkle some pine nuts, sesame or even almonds on the pan, pour the batter and bake in a 180° oven for 20 minutes or longer (depending on the pans) until the surface is golden brown and the cakes are done.
